Migena Cake (grigoro kai nostimo keik)

Ingredients
  1. four eggs
  2. one pound of flour that rises
  3. 250gr butter melted butter
  4. two cups of sugar
  5. two oranges juiced
  6. two tea spoons coco powder
Procedure
  1. Pour into the mixer in this order butter, eggs, orange juice, sugar, flour and then mix
  2. Take some of the mix and mix with coco powder
  3. Pour half the original mix in a form pan
  4. Then pour the mix with coco on it and then the rest of the original mix
  5. Then bake at 180 celcious (preheat the oven from earlier) - with a cover if it starts getting too red on top
  6. Test with knife to see if done - if knife comes out clean it's done!

tzatziki or cucumber sauce

The original recipe. This is the secret to tasty gyros and not the lamb meat.

Ingredients
  1. sour cream - medium size container
  2. cucumber - one or half depending on desired thickness of sauce
  3. one clove of garlic

Procedure
  1. Grade cucumber in one inch long strips (approx)
  2. Cut garlic in little pieces then add sugar and crush the mix together
  3. Add step 1 and 2 to the sour cream and mix all together
  4. If mixture is too thick add more graded cucumber

pork chops

Ingredients
  1. two medium size pork chops
  2. four medium onions - chopped small
  3. one medium carrot or 6-8 baby carrots cut up in small rounds
  4. one clove of garlic - finely crushed
  5. two table spoons of white wine vinaigrette

Procedure
  1. preheat oven at 375
  2. in a covered oven pan put olive oil barely on the bottom
  3. add clean pork chops and add salt and pepper all over them
  4. then sparkle the crushed garlic all over them
  5. add the chopped onions and the cut-up carrots
  6. put the covered pan in the oven while lowering the temperature at 360
  7. check occasionally to see if meat is tender
  8. when tender, add the two table spoons of white wine vinaigrette and take off cover
  9. leave until has reached desired color

apple-sage chicken sauce

Delicious sauce for chicken breast (already cooked separately) - usually served with pesto pasta.

Ingredients
  1. one medium size apple - cut up in small cubes or think sliced half moons
  2. four or five leaves of fresh sage - cut up really fine
  3. one tablespoon of sugar
  4. some lemon juice (bottom of a cup)
  5. a quarter of a chicken bouillon cube - melted in water
  6. one medium onion - finely chopped
  7. some heavy cream  (not exactly sure how much, whatever looks good - it just needs to be immersed in it)
  8. one clove of garlic - finely crushed

Procedure
  1. fry the onions in olive oil until they look pretty done
  2. add the cut-up apples and stir until apples are soft too
  3. then add the melted bouillon cube, lemon juice, and garlic while stirring
  4. also add the table spoon of sugar and stir for a couple of minutes until all mixed
  5. turn burner off - then add the cream and sage and stir again
